INGREDIENTS:
½ Teaspoon Salt
½ Cup of Gram Flour/Besan
2 Tablespoons of Chopped Corriander Leaves or Mint Leaves
¼ to ½ Teaspoon of Garam Masala Powder (Optional)
3 Green Chopped Chilli Peppers or 1 Teaspoon of Red Chilli Flakes
1 Teaspoon of Crushed Ginger Garlic Paste
Oil for Deep Frying as Needed
¼ Cup of Rice Flour or 2 Tablespoons of Corn Starch
½ Teaspoon ajjwain or carom seeds (Optional)
¼ Cup of Chopped Capsicum or Bell Peppers
1 Thinly Sliced Medium Onion
1 Medium-Sized Chopped Carrot
1 Cup of Chopped Spinach
1 Cup of Shredded Cabbage
5 - 6 French Beans
DIRECTIONS
- Wash the veggies clean and cut them into pieces as required
- Add the veggies to a bowl, garam masala, ginger garlic paste, salt, green chillies/chilli flakes, and other herbs.
- Keep them aside for 10 minutes
- Add the besan flour, rice flour/corn starch, and ajwain into a slightly sticky dough.
- Add more salt, garam masala and green chillies if required.
PREPARATION
- On a medium flame, heat the oil in a pan
- Take small portions of dough and flatten with your fingers and slowly put in the oil
- Fry the dough on a medium flame and stir them slowly until they turn into crispy golden brown colour
- Remove the pakora to a clean plate and fry in batches until the complete dough is finished
- Serve the vegetable pakora hot with masala tea or as an evening snack with green chutney
