Maa Ki Dal Curry is a traditional North Indian Punjabi dish mostly consumed as a side dish with steamed rice, roti, chapati, paratha and poori. This dish has various variations and is also known as black gram dal curry, kali dal curry, sabut urad dal curry or black lentil stew.

Ingredients
1 Cup of Whole Black Gram / Urad Dal
1 Tsp Turmeric Powder
1 Tbsp Mustard Oil
Salt To Taste
3 Cups of Water
1 Medium Sized Onion
2 Tomatoes (Puree)
1 Inch Ginger (Crushed)
5 Cloves of Garlic (Crushed)
2 Green Chilli / Jalapeno
1 Chopped Onion To Garnish
1/4 Cup of Cilantro to Garnish
Salt To Taste
1 to 2 Tsp Red Chilli Powder / Paprika
1 Tsp Dry Mango Powder
1 Tsp Turmeric Powder
1 Tsp Coriander Powder
A Pinch of Asafoetida (Hing)
2 Bay Leaves
1 Tsp Cumin Seeds
1 Tbsp Mustard Oil
Finely Chopped Coriander Leaves

To Make The Dal
Directions
Soaking Lentils
Rinse sabut urad dal in water for 2 to 3 minutes and soak in water for 30 to 40 minutes. For the lentils to be smooth you can also soak them in water overnight for 5 to 6 hours.
Later on drain water from the soaked sabut urad dal.
Making Sabut Urad Dal Curry
Heat oil in a kadai or pan and add the cumin seeds. Add the chopped onions and fry till they turn into golden brown colour.
Add the tomato puree and mix well.
Add the crushed ginger garlic paste.
Now add the chopped green chillies and dry spice powders.
Saute the masala till the oil starts to leave.
Add the soaked black gram / sabut urad dal, water and salt.
For Cooking Sabut Urad Dal Curry
Take the soaked sabut urad dal and pressure cook them in salt, turmeric water along with mustard oil until they become soft. Now turn off the flame and keep it aside.
Till the gravy reaches its consistency, keep the curry without lid in simmer if the dal is thin.
Finally garnish the curry with chopped coriander leaves and serve the sabut urad dal recipe hot with kulcha / roti / nan /chapathi / butter nan / plain boiled rice or plain parathha.
Recipe Note
* If dry mango powder is not available use lemon juice instead.
* Make the dal curry less or more spicy by adjusting the quantity of red chilli powder and chillies.
* The dish consistency can be made thin or thick depending on your preference.
