Korma, also called as Kurma is an aromatic gravy or sauce-based dish that is popular in India as well as in Central Asia. Korma is a specialty from the Mughlai cuisine. Kurma is generally made with a combination of vegetables like – carrots, cauliflower, potatoes, french beans, green peas. Absolutely flavorsome and delish is this Vegetable Kurma– a warming, spiced, and complexly flavored curry from the Indian Cuisine made with nuts, seeds, spices and mix vegetables.

1 cup coconut (grated)
8 cashew / Kaju
1 inch ginger
1 clove garlic
2 chilli
2 tbsp poppy seeds/khus khus
1 tsp coriander seeds
½ tsp fennel / saunf
handful coriander
¼ cup water
4 tsp oil
1 bay leaf
1 inch cinnamon
2 pods cardamom
3 cloves
1 onion (finely chopped)
1 tomato (finely chopped)
¼ teaspoon Turmeric powder
1 teaspoon red chili powder
1 teaspoon Coriander powder
½ carrot (chopped)
10 florets cauliflower / gobi
3 tbsp peas / matar
1 potato (chopped)
5 beans (chopped)
1 tsp salt
3 tablespoon plain yogurt
1½ cup water

Directions
First chop and prep the vegetables and cook them till soft. For cooking choose any one method from steaming, boiling, cooking in microwave or sauteing in pan.
While veggies are cooking, take all the paste ingredients into the grinder jar and make a smooth paste.

Making vegetable korma or veg kurma recipe:
Firstly, in a large Kadai heat 4 tsp oil and saute spices.
Add 1 onion and saute well.
Further, add 1 tomato and saute until soft and mushy.
Now mix in salt, turmeric powder, red chili powder, and coriander powder, cook for a minute.
Next mix in prepared paste and cook for a minute.
Then add water to get curry consistency and simmer for 5-6 minutes.
Now add whisked yogurt and mix immediately otherwise it may get curdled.
Now add cooked veggies and simmer for 4-5 minutes then turn off the stove.
Recipe Note
- Firstly, add vegetables of your choice to make khurma healthier.
- Also, adding coriander leaves makes the masala paste rich and greener.
- Additionally, adjust the consistency by adding water as required.
- Finally, veg kurma recipe tastes great when prepared slightly spicy.
