Saagu is basically a coconut-based veg curry with a beautiful blend of flavors and spices. It is a very simple Karnataka-style dish prepared with mixed vegetables. In every South Indian home, sagu is prepared almost every weekend. The rich creamy texture of curries makes your breakfast complete. It goes well with set dosa, poori, chapati, and rava idli.

Ingredients
8-10 cashews
2 tbsp roasted chana dal
2-inch ginger
3 to 4 small garlic cloves, chopped
3 green chilies
3 cloves
1-inch cinnamon stick
6 black pepper
¼ cup coconut grated (fresh or desiccated)
2 tbsp coriander leaves
Water as required
2 tablespoons oil
1 teaspoon mustard seeds
Few curry leaves
1 pinch asafoetida (hing)
1 to 2 dry red chilies
1 medium to large onions (finely chopped)
1 pinch turmeric powder
1 small tomato (chopped)
1.5 to 2 cups of mixed veggies like potatoes, carrots, french beans, cauliflower, green peas.
2 cups water to be added for cooking veggies

Directions
First, take all the ingredients that will be needed to make the ground paste for veg sagu.
Add everything in a grinder jar or a chutney grinder jar.
Add 1/4 cup water and grind to a smooth paste. Keep aside.
Making Veg Sagu:
Heat oil in a pan, add mustard seeds and let them crackle. Then add curry leaves, a pinch of hing, dry red chilies. Saute for a few seconds or till the red chilies change color.
Then add the chopped onions. Saute the onions on a low to medium flame, till they turn translucent.
Then add a pinch of turmeric powder. Mix well.
Now add the chopped mix vegetables and tomatoes to it. Saute them for a few minutes.
Now add 2 cups water. Season with salt as per taste.
Cover the pan with its lid and cook the veggies on a low to medium flame.Check a couple of times when the veggies are cooking.
When the vegetables are almost cooked, add the ground masala paste. Mix it very well.
Cover the pan with its lid and simmer till the gravy thickens. It will take about 7 to 8 minutes on a low flame.
Recipe Note
- Firstly, if you want more rich and thick gravy, you can add curd at the final step.
- Furthermore, adjust the spices according to your choice. Usually, it taste great when spices are minimum and with lots of flavours.
