Vegetable Biryani is an aromatic rice dish made with basmati rice, mixed veggies, herbs and biryani spices. This easy vegetable biryani is a meatless Indian delicacy perfect for vegetarian or vegan folks out there. It is loaded with a variety of fresh vegetables and is equally flavorful and tasty compared to any meat biryani. It is one of the most famous dishes in Indian households. It is not only easy but also the most delicious.

Ingredients
2 bay leaf
2 inch cinnamon
6 cloves
1 teaspoon shahi jeera
2 star anise
2 cups basmati rice
1/4 cup green peas
1/4 cup carrot chopped
1/4 cup green beans chopped
1/4 cup potatoes chopped
2 medium sized onions chopped
2 small tomatoes chopped
4 teaspoons chopped fresh mint
2-3 green chillies chopped
2 teaspoon ginger garlic paste
1 teaspoon red chili powder
0.5 teaspoon turmeric powder
1.5 teaspoon garam masala
3.5 cups water or thin coconut milk
3-4 tablespoons oil
6 tablespoons curd/yogurt
Salt as required

Directions
Wash basmati rice in clean water twice and soak it for 15-20 minutes.
Heat oil in a thick bottom pan/ pressure cooker, add bay leaf, star anise, shahi jeera, cloves, and cinnamon. Saute it for 1 minute.
Add onions, green chillies and saute for 2 to 3 mins till the onions turn translucent.
Next add tomatoes, ginger-garlic paste and saute until the raw smell has gone off.
Add all the chopped vegetables and fry for about 2 minutes.
Next add yogurt, salt, mint leaves, red chilli powder, turmeric, and garam masala. Mix all of these and fry it for 2 to 3 mins.
Next, add water and bring it to a boil in a high flame. When it starts boiling, open the lid and add soaked basmati rice.
Mix well and close the lid and allow it to boil again. Cook in low flame for 15 to 20 minutes.
Now veg biryani is ready. Serve it with raita.
Recipe Note
- You can also garnish with fried cashews, and fried onions.
- Instead of oil, you can use ghee.
- Once done, if your rice turns out too dry, sprinkle some ghee on top and mix gently.
