Papri chat is a delicious street food prepared by mashing and mixing potatoes, tamarind chutney, chickpeas and yoghurt. This snack especially includes every taste one wanted to experience like sweet, tangy, sour and spicy.

PREPARATION OF PAPRI CHAT

  • In a bowl mix yoghurt and whisk until it turns smooth.
  • Mix salt and sugar into the yoghurt for the required taste.
  • Place the papri crackers on a small plate and add the boiled chopped potatoes on top of them.
  • Add up the coriander mint and tamarind chutney on top of the potato pieces.
  • Sprinkle a pinch of chat masala powder, red chilli powder and cumin powder on top of the crackers.
  • Serve with the coriander leaves on top and enjoy the papri chat on a long evening.

2. VADA WITH DAHI (DAHI VADA)

Another special popular snack that's most preferred and prepared on Holi is the dahi vada. Vadas are soaked in dahi or yoghurt along with lentil-fried balls. Dahi vada is quite famous Borth Indian snack street dish with a touch of crunchy, spicy and creamy flavours.

DAHI VADA PREPARATION

  • Soak lentils for 8 hours or overnight and blend into a fine paste with a few tablespoons of water.
  • Add baking powder and salt to taste.
  • Knead the dough and preheat the oil in a pan meanwhile.
  • Use a plastic cookie sheet or butter paper and put some dough on it.
  • Roll the dough into small balls and flatten them with wet fingers.
  • Palace these flattened dough in the hot oil and deep fry on medium heat until they turn into golden brown colour.
  • Remove the vadas from the oil and place them in a small water bowl.
  • Soak the deep-fried vadas in water for about 15 minutes.
  • Pour yoghurt on top of the vadas and add salt along with sugar to taste.
  • Dry roast and grind the cumin seeds into fine powder.
  • Pour the yoghurt semi-liquid mix on top of vadas evenly all over. 
  • Garnish and sprinkle chat masala powder, cumin powder and red chilli powder on top of the deep-fried dahi vadas.
  • To add that extra tangy flavour, add a tablespoon of tamarind and green chutney on top or as a munch to the dahi vadas and serve hot.

3. PAPDI MADE WITH BESAN

Besan papdi is a quick savoury and crispy snack prepared with chickpea flour or gram flour or besan. Besan papdi tastes delicious when served with hot tea in the evenings.

BESAN PAPDI PREPARATION

  • Take a bowl with besan and mix it with water.
  • Add a few drops of oil to the mixture as well.
  • Mix well to form a batter and add this batter to a nonstick pan.
  • Boil the batter for about 5 minutes on low heat.
  • Mix a pinch of baking soda, salt, turmeric powder and red chilli powder into the batter and mix thoroughly.
  • Form the dough into small round-shaped balls and roll them into a flat round shape.
  • Fry them until they turn golden brown colour and crispy in taste.
  • Serve hot by draining them on paper tissues to remove the excess oil.
