Mushroom Biryani is the classic vegetarian version of biryani with meaty mushrooms, tender fluffy rice, and flavorful spices. A spicy, tasty mushroom and rice recipe, these vegetarian mushroom biryanis are perfect for a delicious weeknight meal.

Ingredients
1 cup Basmati Rice / Sona Masoori Rice
2 cups white mushroom (add more if desired)
1 medium Onion thinly sliced
1 medium Tomato finely chopped
1 tablespoon Ginger Garlic paste
12 - 15 Whole cashews
2 green chilies slit lengthwise
¼ cup Mint (pudina)
¼ cup Cilantro (coriander leaves)
1.5 cups Water (depends on the quality of the rice) and 2 cups water for soaking
Salt to taste
¼ teaspoon Turmeric powder
½ teaspoon Red chilli Powder
1.5 teaspoon Biryani Masala or Garam Masala Powder
1 Bay leaf
2-3 Cloves
2 Cardamom
1 teaspoon shahi jeera

Directions
Before you start, rinse the basmati rice until the water turns clear. Then soak it in 2 cups water for 20 minutes and then drain the water using a colander and set it aside.
Heat 2 tablespoon oil in a pressure cooker,once it’s hot add whole spices like bay leaf, cinnamon stick, cardamom, shahi jeera, and cloves.
Then add the sliced onion, green chili, and cashews. Cook for around 3 minutes until the onions are soft and light brown and cashews are lightly browned too. Then add ginger-garlic paste and cook for 1 minute.
Next, add tomatoes and saute for a minute till they become soft. Add in the dry spices like turmeric, red chilli powder, coriander powder, and biryani powder to it and saute for just 30 secs. Make sure spices don’t burn.
Add mushrooms and cook them for 1 to 2 minutes.And mix again gently. Remember to slice them thick. You can add more mushrooms if you want here.
Add rinsed Basmati Rice, water, salt, and give a stir. Sprinkle some mint and coriander leaves and mix.
Then close the pressure cooker lid and cook for 2 whistles on medium flame.
Let the pressure release naturally and fluff with a fork.
Mushroom Biryani is ready to serve with Onion Raita or plain yogurt.
Recipe Note
- You can add fried onions on top before serving.
- Remember to slice mushroom thick for this recipe. Small pieces may pressure cooked easily and may turn mushy.
- You can increase or decrease spices accordingly.
