Desi Wheat Pearled Soft has a very mild flavor, similar to white wheat, but is used differently. Because it is low in gluten, soft white wheat is best for baked goods that should have a tender crumb, like muffins, pancakes, quick bread, biscuits, and pie crusts. Pearl Wheat is produced from fully-matured soft white wheat that is then passed through a pearling machine. The pearling process removes the hull (the outer layer of the grain) from the kernel, which helps to lower the cooking time of the grains and extends their shelf life.
