The flavor of Sac Lemon (Citron) can be described as being aromatic of rose, lavender, and pine with a slight note of herbaceous. The compound which is important for producing lemon flavor is citral. Citral produces the characteristic “citrus” flavor and can be found in the form of two isomers, neral, and geranial. Lemon is a rich source of vitamin C, providing 64% of the Daily Value in a 100 g reference amount (table). Other essential nutrients are low in content. Lemons contain numerous phytochemicals, including polyphenols, terpenes, and tannins. The citron peel is bright yellow in color, and slightly lighter than that of the lemon. The outside appears to be wrinkled or smooth, and its skin is very thick. The pulp accounts for about 25% of the fruit and is acidulous in flavor, slightly bitter.
