1Kg of Cashew Nuts

2 Medium Sized Onions
3 Tsp of Oil

Salt To Taste
1/4 Tsp of Turmeric Powder

1 Tsp of Red chilli Powder

1/2 Cup of Coconut Milk

1 Tsp of Kasturi Methi
1/2 Bunch of Coriander Leaves

2 Pieces of Cloves

2 Green Chillies

Small Piece of Cinnamon
1 Cup of Grated Coconut

2 Tsp of Poppy Seeds

3 Star Anise
For Masala Paste:
Directions
Clean and soak the cashew nuts for an hour.
Chop the onions into small slices.
Grind all the ingredients of the masala paste and keep the residue aside.
Heat oil in a pan. Add the onion slices and fry them.
After a few minutes add salt, turmeric powder, red chilli powder, masala paste and coconut milk.
Add the soaked cashew nuts when the coconut milk starts boiling.
After 5 minutes, put off the flame when the curry turns into slightly thin gravy.
Take the curry into a bowl and garnish it with the coriander leaves and kasturi methi.
Serve it with roti, pulka, naan or plain rice.
Recipe Note
• Ginger-garlic paste can be added while frying onions to get that delicious flavour.
• Add a small piece of butter to make the curry more soft and tasty.
• Tomato puree can be added to make the curry more tomato flavoured.
