1/2 Kg of Carrots

1 Lemon Sized Tamarind

2 Tsp of Mustard Seeds

1 Tsp of Cumin Seeds

2 Tsp Sesame Seeds

3 Medium Sized Green Chillies

1 Pod of Curry Leaves

2 Small Red Dried Chillies

1 Tsp of Urad Dal
-
Salt To Taste
3 Tsp of Oil
A Pinch of Turmeric Powder
1/2 a Bunch of Coriander Leaves
Directions
Peel and chop the carrots into medium pieces. Chop the green chillies and keep them aside.
Soak the tamarind in water. After 5 minutes squeeze out the tamarind juice out of it.
Dry roast 1 tsp of mustard seeds, sesame seeds and red dried chillies. Blend them into a smooth powder in the mixer when it is cool.
Heat the oil in a pan. Add the cumin seeds, urad dal, green chilli slices and the curry leaves.
Let them pop up and add the carrot pieces, turmeric and salt. Sauté it for about a minute. After few minutes add the tamarind juice and close it with a lid until the carrot become softer.
After a few minutes put off the flame and garnish it with coriander leaves.
Once the curry is cool, sprinkle the blended powder and mix it well. Serve it with rice, roti.
Recipe Note
Instead of red dried chillies you can even add red chilli powder directly while cooking.
