A perfect mix of healthy vegetables boiled along with curd or yogurt to cook into a delicious curry dish which can be taken as a side dish for steamed rice and also as a curry for chapati, roti, nan or any Indian flat bread.

1 Tsp of Red Chilli Powder
1/4 Tsp of Turmeric Powder

1 Tsp of Ginger Garlic paste
1/2 Bunch of Coriander Leaves
3 Tsp of Freshly Grated Coconut

5 Pods of Cashew Nuts

2 Medium Sized Green Chilies
-
1 Tsp of Poppy Seeds

2 Cloves

2 Cardamom

For The Curry
For Masala Paste
Directions
Chop the vegetables carrot, potato and beans into pices and boil them. Keep them aside for few minutes.
Chop the onion, tomato into slices. Grind the coconut into a thin paste. Keep them aside.
Grind all the masala ingredients into a fine paste. (Coconut, cinnamon, cardamom, cloves, green chilies, cashew nuts). Keep it aside.
Heat the oil in a pan. Add the chopped onion slices, curry leaves and fry them for a few minutes.
Add the red chilli powder, ginger garlic paste, turmeric powder and fry the curry.
Add the boiled vegetables and salt. Let it cook in simmer.
After 5 minutes add the blended masala paste, tomato slices and leave it for 5 more minutes.
Put off the flame and take the curry into another bowl.
Garnish it with coriander leaves.
Serve it with roti, naan, pulka or plain steamed rice.
Recipe Note
• Vegetables can be of your choice. Green peas, yellow peas can be added if needed.
• Yogurt can be added few minutes before finishing the curry.
• Add lemon juice for tanginess if required.
