North Indian recipe Chinese Okra Masala Curry also known as Turai Ki Sabzi is prepared by stir frying the Chinese okra and cooking with spices. Since the okra alone doesn't have any taste to it or have only a certain neutral taste, adding up few spices and preparing it deliciously. Chinese okra have ample of vitamin C, vitamin A, iron, protein and is a good source of fiber with calcium reserves.

Chinese Okra - ½ a Kg

Onions - 2 Medium Sized
Black Gram - 1 Teaspoon

Salt - To Taste
Oil - 3 Tablespoons
Coriander Leaves - ½ a Bunch
Bengal Gram - 2 Teaspoons
Coriander - 2 Teaspoons
Poppy Seeds - 2 Teaspoons
Dried Red Chilli - 2

Directions
Clean and chop the onions, green chillies and Chinese okra into small pieces separately and keep them aside.
Now, fry the bengal gram, poppy seeds, coriander, red dried chillies in a pan without oil until for about 2 minutes.
Let these ingredients cool. After few minutes grind these cooled ingredients together by adding some water. Make it into a fine paste and keep it aside.
Now, heat oil in a pan. Add the black gram, cumin seeds, mustard seeds, curry leaves and green chilli slices. Let them pop up.
Add the onion slices and sauté for about few minutes.
Let the onions turn into golden colour and add the Chinese okra slices.
Saute the gravy curry and leave it for few minutes.
Now add the masala paste and the required salt to the curry. Mix it and let it cook for about 2 to 4 minutes.
Turn off the flame. Take the gravy curry into another bowl and garnish it with the coriander leaves.
Serve it with rice, roti, chapati or any Indian flatbreads.
Recipe Note
* Instead of green chillies, red chilli powder can be added. But green chillies are suggestible.
* Small slices of ginger and garlic can be added before frying the masala ingredients.
* Make sure to select tender Chinese okra.
