Yellow cucumber chutney also known as dosakai chutney typically used as a side dish in South Indian cuisine. You can compliment this chutney with ghee roasted chapathi, roti or plain rice.

2 Teaspoons of Cumin Seeds

2 Teaspoons of Sesame seeds

3 Medium-Sized Green Chilies

1 Teaspoon Oil

1 Teaspoon Mustard Seeds

A Pinch of Hing/Asafoetida

1 Pod of Curry Leaves
1 Red Dried Chilli
1/2 Bunch of Coriander Leaves
1 Yellow Cucumber
Directions
Clean, peel and chop the yellow cucumber into small pieces and removing the seeds. Add salt and mix the pieces.
After 15 minutes, squeeze the water from the yellow cucumber pieces and take that cucumber water into a bowl.
Grind the sesame seeds, salt and cumin seeds with the yellow cucumber water and make it into a fine paste.
Add the green chilli slices, yellow cucumber pieces to the paste.
Heat oil in a frying pan. Add the mustard seeds, cumin seeds, red dried chilli, curry leaves, hing and let them pop.
Garnish the chutney with seasoning and mix it while serving.
Recipe Note
• Make sure to pick a greenish yellow cucumber.
• Tamarind juice can be added for tanginess.
• Never choose a sour cucumber.
