Andhra Style Special curry dish made with Yam and Malabar spinach also popularly known as Kanda bachali curry is high in protein content and is a very nutritious side dish that is delicious with both plain rice or chapathi, roti or any flat Indian bread.

Ingredients
2 Cups of Malabar Spinach

Salt To Taste
1/4 Tsp of Turmeric Powder

3 Tsp of Cooking Oil

Small Piece of Ginger

1 Tsp of Cumin Seeds

1 Tsp of Mustard Seeds

1 Pod of Curry Leaves
1 Red Dried Chilli
1 Tsp of Black Gram
-
3 Green Chillies
-
1/2 Tsp of Red Chilli Powder

A Pinch of Hing/ Asafoetida
-
Lemon Sized Piece of Tamarind
1 Tsp of Fenugreek Seeds

1 Small Yam
Directions
Clean and chop the yam into medium slices and finely chop Malabar spinach, ginger along with the green chillies.
Clean and soak the tamarind for about 15 minutes.
Take both yam and malabar spinach into a cooker. Add the tamarind water, salt, turmeric powder, fenugreek seeds and boil them.
Heat oil in a pan. Add the black gram, cumin seeds, mustard seeds, red dried chilli, curry leaves, Hing, green chilli and ginger slices.
Let them pop up and then add the boiled yam along with the malabar spinach to it.
Mix the curry and after a few minutes add the red chilli powder.
After about 3 to 5 minutes, put off the flame and take the curry into a bowl.
Garnish the curry with coriander leaves.
Serve it with plain rice, roti, chapathi or pulka.
Recipe Note
• Garam masala can be added if required.
• Don't add too much tamarind water for boiling.
